  • Whole milk ==> 200ml ( or evaporated milk/3 tablespoonful powdered milk in water)
  • Butter/margarine (melted) ==> 2 tablespoon or vegetable oil
  • Sugar ==> 4 tablespoonful (depending on how much you like sugar)
  • Minced Chilli pepper or Scotch bonnet (Ata Rodo)
  • Minced Onions ==> 1 tabkespoonful
  • Salt ==> ¼ teaspoon
  • Nutmeg ==> a spoon
  • Vegetable oil ==> 1-2 tablespoonful

 

Important:

For those who would prefer to go for the evaporated milk, you might be required to dilute it with water and if you don’t wish to, you might as well leave it as it is.

For those who will be using powdered milk, ensure to dissolve it in about 180-200 ml of water. This is determined by how thick or thin you would want the outcome of your pancake to turn.

It is not a must for you to use baking powder while preparing the Nigerian pancake, but to make it even more fluffy and fluffer, then you can add it.

You can use a grater to mince the onions, I actually don’t like the blended type so I would not advise you to blend it. But for those who do not like to see traces of onions in their food like my brother, you have to blend it in a blender until no trace of onion’s lump is found in it.

1. You can use a blender for faster smooth output. You might also leave it in the bowl for about 10 minutes so that the flour can soak until it is soft to dissolve properly.

2. The size of the batter will determine how thin the pancake will turn out to be. So it is better to make the batter thinner if you want your pancake to be thin

3. Ensure to spread the oil evenly in the pot and try as much as possible not to use a pot that is sticky. It is always best to use a nonsticky post for food like this. So ensure to get one before you proceed to make your next pancake.

4. Be conscious of time, so that when you cook one side of the pancake for few seconds, you should turn the other side immediately, failure to do this when needed will lead to a burnt offering for the dogs.

5. Like said earlier, this isn’t a food you should prepare when you are in a hurry, but if at all you are in a hurry for your result, you can use an electric whisk or pour all the ingredients in a blender and blend everything together. But in my house, as typical local Nigerian blood, we prefer to do everything manually with the hand. Perhaps it makes it even sweeter, lols!

6. Repeat all the aforementioned procedures for the other pancake batter.

7. Do not serve on a moisturized plate. Ensure your plate is not wet and water-free.

8. Do not cover your pancake after serving to avoid condensation of water which might spoil the freshness of the taste.
